Stuffed Cabbage and Peppers

 

 

 

 

 

 

 

 

6 servings – 295 calories per serving

 The Ingredients-

8 whole big cabbage leaves

6 green/ red peppers which fits for filling

2 onions

500 g chopped chicken mixed with turkey (preferred fresh)

1 cup of rice

1 cup of water

1 egg

Herbs – 1/2 cup of chopped parsley and cilantro

Spices – Turmeric, salt, ground black pepper, cumin

300 g Tomato paste

1 spoon of oil

 

Preparation-

Separate 8 whole big cabbage leaves from the cabbage. Boil the leaves to soften them.

Take out the inner part of the pepper with a knife, and make sure the pepper is still whole in order to fill it.

Graind the onion and squeeze the fluid.

Mix the – chicken, rice, 1 onion, egg, herbs. Spices and 100 g of the tomato paste, all in one bowl.

Fill the peppers with the mixture, almost until the top.

Take 6 of the cabbage leaves, and put a fair bit of the mixture on them in oreder to make a nice wrap.

Chop the onion into cubes. Fried the other onion in a big pot with only 1 spoon of oil. When the onion is golden, add 200 g of tomato paste and a cup of water, until you get a thin sauce.

Put gently the pepper and cabbage inside the sauce. You can use the 2 cabbage leaves left, in order to cover the whole casserole.

Wait until its boil and reduce the fire. Keep it on low fire for an hour. Make sure every few minutes there’s enough fluid in the pot.
