Chèvre Chaud – Warm goat cheese salad

Such an impressive dish, your guests will never believe it’s healthy, lite and low-calories.

6 servings 65 calories and 50 mg calcium per serving.

Chèvre Chaud (hot cheese)- it’s a dish every French restaurant that respect itself serves as an appetizer.
Very easy to make and very low on calories.
There is a little need for some skills in making the recipe. Therefore I’d recommended to prepare the plates with vegetables in advance, and make the final stage just before serving.
In order to make it low calorie and healthy, I replaced in my version, the baguette, with generally used as the cheese base, with round sliced apples.
The apple slices gives it a slightly sour taste that fits well with cheese.

The ingredients-
Various vegetables of your choice –
cucumber, tomato, radish, various types of lettuce, peppers of different colors and so on.
As a wide range of vegetables you have, as more colorful and uniq your dish will be.
A hand full of arugula leaves
2 tablespoons of olive oil
Coarse salt (preferably grounded in a proper grinder)
12 apple round slices, 1.5 cm thick each
12 round slices of goat cheese, (can be cut from a long goat cheese roll or as a goat cheese medallions).
*can be vary with Roquefort cheese
Halves of walnut for decoration

Preparation-
To prepare in advance
Rinse the vegetables and slice into fine slices.
Arrange nicely on a serving plate, each with a variety of vegetables and arugula.
Sprinkle 1/3 teaspoon of olive oil per serving and a bit of salt.
Place the apple slices on a baking tray, and put in a preheated oven to 180 degrees, for 20 minutes or until the apples are soft.
To make 10 minutes before serving:
place one medallion of goat cheese or blue cheese on each apple, decorate with halves walnuts and replaced in the oven for 10 more minutes.
Just before serving, place 2 cheese-apple rounds on each plate and serve immediately, hot.
