Easy Spinach Lasagna

World known Italian pastry, in a special low-calories version. Tasty and not fattening.
Large rectangular Pyrex dish – about 15 servings – 115 calories per serving

 

 

 

 

The Ingredients-
200 grams of Lasagna leaves (less than half a package)
500 grams of white cheese 5% – use any leftovers in the fridge of different cheeses including cottage cheese and salty/ goat cheeses (5% fat).
2 eggs
200 g of fresh spinach leaves, washed and chopped thin
Jar of lasagna tomato sauce (the perfectionists can prepare themselves their own sauce. Mixing chopped tomatoes and onions with a tomato paste)
5-7 slices of yellow or mozzarella cheese 5% (by the size of the Pyrex)
10 fresh chopped basil leaves, or one spoon of grounded and dried basil leaves
Salt and pepper

Preparation-
Mix the cheese with the eggs in a large mixing bowl.
Season with salt and pepper and add the spinach leaves and the basil.
In a large rectangular Pyrex, Arrange a layer of lasagna leaves.
Soak them in 1/4 cup water.
On top of the first layer put 1/3 of the tomato sauce and 1/3 of the cheese mixture.
Arrange a layer of leaves again and on top of the second layer another layer of tomato and cheese.
Repeat until the lasagna has 3 layers.
Above all, arrange the 5% yellow/mozzarella cheese slices.
Cover the Pyrex with aluminum foil and place in an oven pre-heated to 180 degrees.
Bake about 40 minutes, until the lasagna leaves completely softened.
Serve hot.
