Green Frittata with Spinach Zucchini and Herbs

A great way to diversify your dinner or just as an interesting vegetarian dish

3 servings 95 calories per serving

 

 

 

 

 

Ingredients-
Chopped onion
A bag or a basket of spinach (400 g)
2 grated zucchini
1/2 cup of fresh herbs washed and chopped, like – basil, parsley, cilantro, etc.
3 eggs
¼ cup of milk
Salt and black pepper

Preparation-
Prepare a Teflon pan or skillet sprayed with a tiny bit of oil cooking spray.
Cook the onions for few minutes, until it’s golden-brown.
Add the spinach and zucchini and cook them until the volume goes down a lot.
Add the herbs and cook for another minute.
In a separate mixing bowl, beat the eggs with the milk and spices.
Add the egg mixture into the pan and fry, covered, until the eggs congealed.
At this point, it’s possible to slide the eggs with a plate and turn the frittata upside down, and fry the other side for few more minutes.
The other option is to move the eggs to a pre-heated oven at 180 degrees (with a pyrex or a pan suitable for baking), and bake for another 5 – 10 minutes until the frittata face is golden.
Serve immediately.
