Gal’s Carrot light cake

A Carrot cake without any drop of oil!

The natural sweetness of carrots reduces the need for sweets

All in a fare calories value.

2 oblong cakes of 20 slices, 85 calories per slice.

 

 

The ingredients-

1/4 cup of warm water

2 eggs

Large yoghurt – 200ml (1.5%-3% fat)

3 peeled and finely grated carrots

1.5 cup of self-raising wholemeal flour

1 cup of light brown sugar or 3/4 cup honey

Teaspoon of baking powder

3/4 teaspoon of cinnamon

1 teaspoon of fresh grated ginger or ½ teaspoon of dried ginger powder

1/4 teaspoon of ground nutmeg

1/2 cup of walnuts

2 long English cake baking pans

 

Preparation-

Mix in a bowl- the water, yoghurt, eggs and carrots.

Mix well.

In a separate bowl mix all remaining ingredients except the nuts.

Mixing the two mixtures, the wet and the dry, together.

Stirring gently with a wooden spoon.

Add the nuts and stir again.

Shift to a baking pan.

Bake it in medium heat of 180 degrees, for 30-40 minutes, until the cakes browned.

Check if ready with a toothpick, stuck it in the center, it should comes out dry.

Cool it down and serve.
