Grandma’s Potato Pie ‘Bobbe ‘ by my Granny – Mina

There’s no substitute for the smell and the taste of my childhood potato pie.
I’ll be honest, it wasn’t a piece of cake to get the exact recipe, because my dear grandmother made it with her own style and touch. For example, when I asked “hey granny, how much flour should I put in?” she would say “the exact the amount that the pie need” and would never measure it with cups or spoons like most people do.

After careful observation I got the recipe that I generously share here with you. Highly recommended for those who know the Polish cousin and for others as well.
I upgraded my version with leek and got an excellent substitute for the Hanukkah frying.

For a big family Pyrex 25 servings, 140 calories per serving.

The ingredients-
8 medium potatoes
Onion, peeled and chopped
Leek (only the white part), slice into thin circles
3.5 cups of flour
50g of fresh yeast
2 tablespoons of sugar
¼ cup of lukewarm water
4 eggs
4 tablespoons of oil
+ 1 spoon of oil
Some salt

Mix the yeast with lukewarm water and the sugar in a small bowl and hold it covered for – 10 minutes, until the volume will be double.
Fry the leek and the onion with one spoon of oil until golden.
Peel the potatoes and grate on a fine grater (or food processor). Do not drain the fluids.
Add the potatoes and all other ingredients, and mix well. Cover the bowl and hold it in a warm place about – 30 minutes, until the dough is slightly reduced.
Use the rest of the oil to grease a round or square baking pan (a thin layer of oil).
Mix the mixture a little bit and shift it to the greased baking pan. Put in a cold oven, and then heat it to 180 ° C.
Bake for 30-40 minutes until the BOBBE face become browned.
Serve hot or cold.
