Lite and healthy Sauerkraut casserole

Did you think Sauerkraut, the German well known casserole, is a fatty food and the meat is not healthy at all?!

So here’s the proof it can be otherwise!

This version of the Sauerkraut casserole contains an entire meal – tasty, winter-warming, low-fat and healthy.

6 servings – 250 calories per serving

 

 

The Ingredients-

600 grams of beef breast or shoulder, cut into thick slices

1 tablespoon of oil

1 onion, peeled and diced

2 cans of sauerkraut

2 carrots, peeled and diced

1/2 liter of beer of any kind

2 bay leaves

4 whole black peppercorns

6 medium sized potatoes, peeled and diced in a medium size

 

Preparation-

Heat the tablespoon oil in a large pot, add the onion and fry until golden.

Add the carrots and steam for a few minutes.

Meanwhile, cut the meat into wide strips, and drain the pickled cabbage liquid.

Add the meat and steam for a few minutes.

Add the cabbage.

Add the beer, bay leaves, spices and water altogether so they can cover the cabbage.

Bring to a boil.

Add the potatoes and simmer for approximately – 45 minutes or until the potatoes are soft.

Serve warm.
