Matzah-Brei Lite with herbs

Passover always remained my this special-holiday-smell which I was waking up with.

The Matzah-Brei smell.

And there is no chance I will give up this smell or taste just because of the amount of calories.

I really think and believe we should not give up of what we love, if it’s holiday food or grandma’s cooking smell…

Everything can be done with some small healthier and liter changes.

Matzah-Brei original version is fattening indeed,

So I made a special recipe for those who want both:

Health and great taste without giving up tradition.

So here is my Matzah-Brei dressed in it’s best-healthy-diet-holiday-outfit.

Matzah-Brei One big round – 8 slices – 57 calories per slice

 

The ingredients-

3 whole wheat Lite Matzah bread

2 eggs

1/4 cup of milk

A handful of your fresh favorite herbs, copped (parsley, basil, rosemary)

Or a tablespoon of dried herbs

Salt to taste

 

Preparation-

Wet all the Matzah breads and let them dry in a clean dried towel.

In a separate bowl Beat the eggs with the milk.

Add the salt and the spices or herbs to the bowl.

Break the Matzah bread into small pieces and add to the bowl.

Mix well until the mixture is smooth.

Heat a 24 cm size pan, which allows frying without oil.

Add the mixture and flatten the surfaces.

Cover the pan and fry until golden.

Turn and Matzah-Brei to the other side until golden as well.

Serve warm.
