Recipe of Or Hanin from Holon
12 servings – 100 calories per serving
2 Zucchini, sliced into rounds
2 Red pepper, cut into thin strips
2 Yellow peppers, cut into thin strips
2 Small carrots, sliced into rounds
2 Onions, thinly sliced
4 Branches of thyme (leaves only)
Leaves from 2 sprigs rosemary, chopped
1 Cup of yogurt
200 Gr goat cheese 5%
Cup of whole wheat flour
2 tablespoons + 1 spoon of olive oil
3 tablespoons of black sesame seeds (other option: flax seeds or whole sesame seeds – which will contribute calories. or other favorite seeds: pumpkin, sunflower – which will increase the amount of calories)
Mix the zucchini, peppers and carrots in a bowl, spice them with 2 tablespoons olive oil, thyme, rosemary leaves, salt and black pepper.
Bake in an oven preheated to 200 degrees for 20 minutes until the vegetables are softened slightly.
Remove and let them cool a few minutes.
After the vegetables are ready, lower the temperature to 180 degrees.
While the vegetables are in the oven, fry the sliced onions in the pan with a spoon of olive oil, over medium heat.
Stirring occasionally, about 10 minutes, until the onion softens and begins to brown.
Mix the vegetables with steamed onions in large bowl.
Add the eggs, cheese and flour and mix well.
Pour mixture into muffin pans, filling each cup up to two-thirds full, and sprinkle with black sesame.
Bake in the heated oven about 15-20 minutes until the muffins are ready and brown (use a toothpick in the center of one muffin, for a test, it should come out clean).
Cool slightly in the air before removing the Muffins from their pans.
