Orange trio soup

A wonderful soup, slightly-sweet flavored, which combines the three orange colored veggies, carrots, sweet potato and pumpkin with a twist of black pepper and nutmeg.

six servings, about 90 calories per serving

 

 

 

 

The Ingredients-

1 tablespoon of oil

1 Medium onion

sliced cloves of garlic

2 leeks (white part only)

2 medium sweet potatoes

4 carrots

About 500 grams of pumpkin (a big piece)

Salt and ground black pepper to taste

A small grated nutmeg

Chopped chives for decoration

 

Preparation-

Rinse and peel and chop finely the onion.

Rinse and slice the leek.

In a large pot Steam the onion, leek and garlic with one tablespoon of oil until golden.

Meanwhile, peel the sweet potatoes, carrots and pumpkin and cut into pieces (if you’ll cut the vegetables to smaller pieces, the cooking time will be shortened).

Add the chopped vegetables to the pot with 6 cups of water and spices, and cook until the vegetables are tender.

Shift the vegetables and a little bit of the cooking liquid to a blender or food processor, or mash manually in the pot until a thick texture without lumps become.

If the soup is too thick, add a bit of water, and If necessary, correct the seasoning.

Serve warm.

You can sprinkle chopped chives on top of each plate.
