Refreshing Yogurt and spinach cold soup

Wonderful soup for summer cooling, can be served as a first course or as part of a high protein meal.

Ingredients-

1 tablespoon of oil

2 leeks – white parts only, sliced ​​into rounds

6 cloves of garlic

2 potatoes, peeled and diced

A hand full of thyme leaves (leaves from 10 brunches)

400 g of fresh spinach or a bag of frozen spinach (of 400g)

1 cup full of basil leaves

Lemon juice from half a lemon

6 glasses of mineral water

Some salt to taste

1 Liters of drinking yoghurt

 

Preparation-

In a large pot fry the leeks with one tablespoon of oil

Add all the ingredients except the yogurt.

Bring to boil on high heat.

Reduce the heat and simmer until the potatoes are soft.

Use a stick blender to grind to your favorite texture – can be more finely or coarsely for those who like to feel the pieces of the vegetables.

Add the yogurt.

Stir and Serve cold with ice cubes.
