Rich miso soup decorated with ramen noodles and tofu

A very lite soup, which comes from the Far East.

Easy and quickly to make, and can be served hot in winter and cold in summer.

This recipe is highly recommended for those who haven’t reached the Far East cuisine yet, and looking for an easy start, which always turn to be a success.

8 servings 50 calories per serving

 

The Ingredients-

2 green onions

1 Tablespoon of ginger- chopped/ grated/ dried

2 liters of broth or 2 liters of water + 3 tablespoons organic chicken soup powder

4 tablespoons of miso paste (you can combine light and dark – purchase in stores specializing in the Far East products)

1/2 cup dried Wakame seaweed (sold in stores specializing in the Far East products)

200 grams of tofu

1 Tablespoon of soy sauce

Ramen noodle package (sold in stores specializing in the Far East products)

 

Preparation-

In a big pot steam the green onion and ginger (don’t worry, it won’t be burnt, there is no need for oil) for 2 minutes.

Add the water, the soup powder or the ready-made broth-soup, miso and seaweed.

Mix well the miso paste so it will all melt into the soup.

Cook until boiling, and for another 5 minutes when it’s already boiling.

Add the diced tofu and soy sauce, and cook for 2 more minutes.

At the same time, prepare the Ramen noodles according to the manufacturer’s instructions, in a different pot.

Each plate put a handful of noodles, and some miso soup that includes all the components.

You can decorate with fresh chopped green onions on top.

Serve hot, warm or cold.
