Thai Pumpkin Soup

A soup that has all the components of heat according to Chinese medicine:

Orange vegetables, lightly spicy leek and hot-heating spices

10 servings, 43 calories per serving

 

 

 

 

The Ingredients-

1 tablespoon of oil

2 leeks – white parts only, chopped coarsely

3 carrots, peeled and cut in quarters

1/2 kg of pumpkin, cut into cubes

2 tablespoons of brown sugar

1 teaspoon of grated fresh/frozen Ginger or a spoon of ginger powder

½ teaspoon of cinnamon

½ teaspoon of curry

Salt and white pepper to taste

10 cups of water (preferably mineral)

Can of low-fat coconut milk (check in the supermarket or natural health shops. There is 5.5% fat coconut milk on the shelves!)

 

Preparation-

In a large pot fry the leek with one tablespoon of oil, until it’s slightly golden.

Add all other ingredients, except the coconut milk.

Bring to a boil.

Lower heat and simmer until all vegetables are soft.

Add the coconut milk and cook for few minutes more.

Turn off the heat and with a stick blender grind all ingredients until the soup will become thick (Some people like having small lumps)

Serve hot, you can add noodles or rice.
