Tomato and Rice Soup

Palm oil

Onion, chopped

4 large tomatoes, peeled poached in hot water.

A box of crushed tomatoes

Handful of chopped basil or parsley (optional)

Chopped chives

1 teaspoon dark brown sugar.

Juice of half a lemon

1/2 cup rice


Mars onion until golden palm oil. Add the chopped tomatoes, crushed tomatoes, herbs, sugar, salt and lemon. Add another 6 cups of water. Bring to a boil, lower heat and simmer about 10 minutes. Meanwhile Rinse the rice. Add it to the soup and simmer until rice is tender, just splits. Stir occasionally so rice does not stick to the pot. If soup is too thick, add water. Serve hot.
