Vegetables in Honey&Mustard

A delicious recipe and easy to make.

You can have it as a snack any time or serve it as a side dish at lunch or dinner.

You can diversify with your favorite vegetables.

4 servings, 22 calories per serving

 

 

 

The ingredients-

Red capsicum sliced into strips

Yellow capsicum sliced into strips

Half cauliflower/ Broccoli (or both) washed and divided to flowers

2 zucchinis sliced into rounds

2 carrots, peeled and cut into round or 6 well-washed baby carrots

The ingredients for the sauce-

2 tablespoons of Quality mustard

1 Teaspoon of honey

1/2 cup water

2 crushed cloves of garlic

Juice of half a lemon

1 Tablespoon of thyme

2 tablespoons of chopped parsley or dill

 

Preparation-

Mix all sauce ingredients in a bowl.

Add the vegetables to the bowl and mix well.

Preheat the oven to medium temperature of 180 degrees.

Top a baking tray with baking paper and put the vegetables nicely (in one layer).

Bake until the vegetables are crisp and slightly browned.

Serve hot or cold.
