Yemenite soup

A soup which is a complete meal consisting of protein, carbohydrates and vegetables.

The uniqueness of the Yemen cuisine is the spices they use.

The spices they use are heating the body more then just the temperature of the soup.

They can be used individually or as a mixture sold in supermarkets.

4 dishes – each serving contains 400 calories

 

The ingredients-

4 quarters of chicken without skin

1 tablespoon of oil

4 potatoes

2 medium sweet potatoes

2 onions

2 zucchini

2 carrots

4 tablespoons of chopped parsley

4 tablespoons of chopped cilantro

Spices: 2 teaspoons of a prepared mixture of hawayij Yemenite soup

or a teaspoon of turmeric, ½ teaspoon cumin, salt and ground black pepper to taste.

 

Preparation-

1. cross each consisting quarter in half, wash and dry it.

2. Peel the vegetables. Traditionally, the Yemenis cut the vegetables into large pieces or even leave them whole, but you can cut to any size that suits you.

3. Chop the onions and steam it with 1 tablespoon of oil, in a large pot. When golden, Add the chicken portions and cook until it’s slightly golden as well. Add the remaining vegetables and cover them with water.

4. Cook the soup for about twenty minutes. Then add the spices and cook for forty minutes more, until chicken is cooked and the vegetables are soft (but not too soft).

5. Add the herbs and cook for ten minutes more.

6. Serve the soup hot, can be accompanied by pita bread or fresh bread. Each dish served with chicken, and a selection of all the vegetables.
